Ask for Alonzo Tai Hang hosts Dal Cero winemaker Francesca Dal Cero for an exclusive wine dinner on Tuesday 20th January 2026 at 7pm. The evening pairs six Italian courses with wines from the family's volcanic vineyards in Verona, offering rare opportunity to meet the winemaker whilst experiencing Valpolicella's distinctive terroir at HK$348 per person.
The Dal Cero story begins in 1934 when Augusto Dal Cero purchased land in Roncà, Verona province, dominated by two extinct volcanoes: Crocetta and Calvarina. The steep slopes and dark earth made of lava and tuff presented challenges, but Augusto's instinct proved correct. The volcanic soil, rich in minerals from ancient eruptions, creates exceptional conditions for viticulture.
War interrupted his plans in 1940. Five years later, he returned and immediately resumed expanding vineyards to the volcanic peaks. Today, fourth-generation Dal Cero family members continue cultivating these slopes. Francesca Dal Cero manages both winemaking and export, bringing Dal Cero's volcanic story to international markets.
Six Courses Paired with Volcanic Wines
The six-course menu opens with Ricotta Bruschetta paired with Tenuta di Corte Giacobbe Soave DOC 2024, introducing volcanic minerality through fresh white wine. Seared Tuna follows with Ramato delle Venezie Pinot Grigio Rosato DOC 2024, the copper-coloured rosato bridging white and red progression.
Rigatoni Amatriciana with Roman guanciale arrives alongside Dal Cero Valpolicella DOC 2022, demonstrating everyday expression of volcanic terroir. Braised Beef Cheeks pair with Amarone della Valpolicella Classico DOCG 2020, where partially dried grapes create the concentrated, powerful wines Valpolicella is known for.
Espresso Panna Cotta concludes the evening, allowing conversation with Francesca about the volcanic landscape shaping her family's wines. The progression from fresh Soave to substantial Amarone demonstrates how volcanic minerality expresses itself across different styles.
