Deadly Rabbits Concepts marks a significant milestone in its international expansion with an exclusive modern Polish pop-up dinner at Qué Pasa Tapas y Vino in Tai Hang. On Wednesday, 18 June 2025, Executive Chef Mariusz Ledwoch will present a remarkable culinary journey that bridges Polish heritage with contemporary techniques, offering Hong Kong diners a preview of the innovative cuisine planned for Warsaw's upcoming Slavic Social restaurant.

This special evening represents more than a dining experience—it celebrates the cultural exchange between Hong Kong and Poland as Deadly Rabbits Concepts prepares to launch two venues in Warsaw this year. The pop-up provides a unique opportunity to experience authentic Polish cuisine reimagined through modern culinary artistry, showcasing the depth and sophistication of Poland's evolving gastronomic landscape.

A Culinary Bridge Between Two Worlds

The pop-up dinner emerges from Deadly Rabbits Concepts' expansion into Poland, where Ask for Alonzo will open in Warsaw's iconic Varso Tower, followed by The Slavic Social at the Hilton Warsaw in Q3 2025. For founder Bart Szyniec, this expansion represents a deeply personal journey. "Poland is where my story began, and Asia is where I found my calling," he explains. "These two places have shaped me personally and professionally, and I've always dreamed of bringing them together through something meaningful."

Chef Ledwoch, currently training in Hong Kong to understand the group's culinary philosophy, brings over 20 years of expertise specialising in Central European, Mediterranean, and Italian cuisines. His journey from dishwasher to head chef in Warsaw, combined with culinary training in London, positions him uniquely to interpret Polish traditions for contemporary palates whilst maintaining authentic flavours.

Modern Polish Cuisine Showcase

The HK$348 per person experience begins at 6:00 pm with a generous selection of cold appetisers inspired by Poland's vibrant summer flavours. Highlights include Tenderloin Beef Tartare served on homemade potato bread with house-cured pickles and confit duck egg yolk, and Jellied Trout accompanied by crispy cheese chips, horseradish mayonnaise, and pickled sweet pear. The Pickled Baby Pumpkin Tartare with crushed nuts in peppery salted caramel showcases the chef's innovative approach to traditional ingredients.

Warm appetisers continue this exploration with Pheasant Dumplings featuring caramelised celeriac and nuts, garnished with plums and raspberries. The Rabbit Roll with green peas and carrots arrives in a refreshing thyme and plum sauce, whilst silky Flat Noodles in clear Pheasant Broth demonstrate the elegance possible within Polish culinary traditions.

Main course selections present Poland's game meat heritage through contemporary preparation. The Wild Boar Dumpling combines savoury beef sauce with dark chocolate and Jerusalem artichoke chips, finished with walnuts in horseradish caramel. Roasted Duck Breast arrives with gratinated vegetables and caramelised apple, whilst the tender Venison Stew comes with mushroom sauce and herb oil. Seafood enthusiasts can select the Fish Trio featuring carp, trout and smoked eel with parsley purée and dill sauce.

Authentic Cultural Experience

Beyond exceptional cuisine, the evening includes live entertainment, traditional Polish wax pouring for fortune-telling experiences, and a steak tartare station—elements that immerse guests in Polish cultural traditions. The experience concludes with sharing desserts of Baked Apple Pie with Meringue and Marmalade Doughnut with buttercream crumble, followed by authentic Polish vodka toasts.

His experience spans Central European, Mediterranean, and Italian cuisines, with recent ventures into South American cooking at Baila Warsaw before joining Deadly Rabbits Concepts as Group Chef in 2025.
